Ingredients for Egg Tawa Pulao:
- Boiled Eggs- 5 (4 to be grated+ 1 for garnish) - Raw Egg, whisked- 1 - Cooked Rice, preferably long grained- 3 US cup measure (after cooking) Tempering: - Cumin Seeds (Jeera)- 1 tsp Spice Powders: - Turmeric Powder- 1/2 tsp - Red Chilli Powder- 1.5 tsp - Coriander Powder- 1 tsp - Garam Masala Powder- 1 tsp Other Ingredients: - Onions, thick chopped- 2 medium (150 gms) - Ginger, chopped- 2 tsp - Garlic, chopped- 2 tsp - Tomatoes, chopped- 2 medium (150 gms) - Green Chillies, chopped- 4 - Coriander leaves, chopped- 1/2 cup - Oil- 2.5 tbsp - Butter- 2 tbsp - Salt- 1 tsp Preparation: - Cook 1 cup (US cup measure) rice (preferably long grained rice) & use 3 cups of the cooked rice for this recipe. - Boil 5 eggs. Shell the boiled eggs, grate 4 of them and slice 1 to be used as garnish. - Whisk 1 raw egg and keep it aside for use later. - Chop the onions roughly and peel & fine chop the ginger and garlic. - Also chop the tomatoes, green chillies and coriander leaves Process: - Heat oil & 1 tbsp butter in a tawa/flat pan. - Add the cumin seeds, stir and let it splutter. - Now add the chopped ginger & garlic and fry on medium heat for 1 min. - Add the chopped onions and fry on medium heat for 3 mins. - Now add the chopped green chillies, mix and fry together on medium heat for another 1- 2 mins till the onions are translucent. - Add the chopped tomatoes and fry on medium heat for 3-4 mins till soft. - Now add all the spice powders & salt and give a mix. Cook on medium heat for 2-3 mins till the tomatoes are soft. - Add the whisked egg and mix and cook it on medium heat for 1 min. - Now add the grated eggs and give a mix. - Add 1 tbsp butter and give it a mix again for around 1 min. - Now add the cooked rice and the coriander leaves. - Toss and mix it well on high heat for around 2 mins. - Serve hot after garnishing with sliced boiled eggs.
